I have seen a few write ups about changing the valve seals. I would assume it is easier to do it with the head removed, but I have seen others saying they used compressed air to hold the valves in from dropping.

The local machine shop says the 5V are hard to work on because they are so small and he doesn't have the specific tools.

What are the thoughts here. Remove the head. Replace it all together. Repair in car?

I've done it on a 16V using a ~5ft long piece of cotton cord inside the combustion chamber to hold the valves up. Begin with cylinder at BDC, feed ~3-4ft of cord through plug hole, then slowly rotate crank until the cord compresses and stops the piston prior to reaching TDC. If you can move the crank past TDC for that cylinder, feed more cord into cylinder for next attempt.

Obviously, it's a little trickier with the head still installed, but it can be done.
