Rear shocks need replacement - VW shop manual says take apart most of the suspension to replace them - Is it really that complex?
Local shop quoted almost $1,000, (including new springs at about $100 each)
Also, any recommendation on shocks to increase ride height a little?

Yes, it is a pain to replace rear shocks and/or springs. You can raise the back about 3/8-1/2" with Koni Yellow shocks, they have a moveable lower spring seat that has a slot above and below the standard height. I had extra slots put in mine at a machine shop:

They are a bit stiffer than stock, so if you want a soft ride, you might check Koni Orange or another type. I don't know if other's have the adjustment. You might find a few places that sell OEM type of springs for your car, here is the cheapest I found.
