Okay so short hand summary.

I have a buyer for my car. They are coming in basically 24 hours to pick up the car.

No check engine lights

when its cold the car drives flawlessly

as it warms up it seems to have a mild hesitation under light acceleration. if I get on the throttle harder it runs fine.

I already changed the spark plugs, no benefit

Im guessing either MAF? or vacuum leak? coil packs are 3 years old but maybe?

anyone have any thoughts, how can I start checking this

Try cleaning MAF, blow out air filter, maybe "recalibrate" your drive by wire if you have it. Or just be a turd about it and say yeah that's part of drive by wire.

Cleaning the MAF might help as would cleaning the throttle body. Then adapt the throttle body.

Runs the same with the MAF plugged in or not? I would check the voltage thats going to the MAF. It would make sense that if you unplug it, the car should run like garbage - if there is not change I would think there is an issue with the MAF or the signal.

Wish I could give you better input :-/
