It heats up under load because that's when more gas is being burned. Burning fuel = heat, which is what makes the car go.
Your symptom sounds like a water pump issue.

It could be a bad water pump or it could be a damaged head (cracked or warped). How many miles of driving have you done while the car is HOT?
Sounds like a slipping water pump impeller to start the issue. Hopefully there's no further damage from the overheating.
