2003 Passat GLX V6, very difficult to start when cold (currently in 25 degrees Celsius/ 77F outside). Once started, need to keep revs high for a minute or two to stabilize or it will cut out again. Now warm and stable, car will have no more issues starting for the rest of the day within a 4 hour period. Read and searched forums for solutions, replaced CTS but no change. Thought maybe bad part so bought another official CTS from dealer as well but still no luck. Recently replaced battery as well so that isn't the issue.

Perhaps thinking it is thermostat? Proxy issue with A/C in that when idling it will be blowing warm/normal fan air, but once car is moving above 40 km/h you can actually hear the A/C kick in with cool air. Although I'm thinking that could also be the fan clutch, looks like it is spinning real slow.

A faulty thermostat can not cause hard cold starts.
Looks like there is a short in the CTS wiring or connector. Check with VCDS what temps are reported to the gauge and to the ECU.

What temp is shown on the gauge at OT ?

I doubt there is a problem with the AC clutch, probably no fault with the AC.
Does the AC stop when you slow down under 40km/h or stop ?

Check with VCDS what temps are reported to the gauge and to the ECU.
A few minutes with VCDS might reveal what's going on. Could be a connection problem as Tom suggested. You also might have an air leak that keeps the mixture too lean even with a properly functioning CTS, and it takes awhile for the O2 sensors to take over mixture control.

hello folks, I have this issue too, i got a cts from dealer 059 919 501 A, but the real problem is that the female connector is broken part 4B973712 and two of the four wires were disconnected I'm going to get a new connector but I don't know how the wires attach and what order Auto part
